In addition to the cookies shown below, Bite Society produces dozens of delicious products, many with local ingredients—from hot sauces and pickled fennel to gummy candies and granola. Lendy Hensley founded the company after running a successful catering business. There’s a shop in Pike Place Market, and a second is slated for SEA Airport this spring. Hensley has deep ties to the city’s food scene. “Seattleites care so deeply about farm culture and the source of their food. I think this emanates from the success of Pike Place Market. It’s a major tourist attraction today, but it began as a working market. Supporting farmers markets is just in our DNA here.”
